02 - Add rolled oats to the processor and pulse several times until well combined. The mixture should begin to hold together when pressed, but retain some texture from the oats.
03 - Transfer mixture to a mixing bowl. Gently fold in fresh blueberries using a spatula, taking care not to crush or mash the fruit.
04 - Refrigerate the mixture for 10 minutes to firm up slightly, making it easier to handle and shape.
05 - With damp hands to prevent sticking, roll the mixture into 16 evenly sized balls, approximately 1 tablespoon each.
06 - If desired, roll each ball in shredded coconut until evenly coated on all sides.
07 - Place bites in an airtight container and refrigerate for up to 4 days, or freeze for up to 1 month. Thaw frozen bites in the refrigerator before serving.
