# What You Need:

→ Dairy & Protein

01 - 1 cup cottage cheese, full-fat or low-fat
02 - 1 scoop vanilla protein powder, whey or plant-based

→ Fruit

03 - 1/2 cup fresh blueberries
04 - Zest of 1 lemon
05 - 1 tablespoon fresh lemon juice

→ Dry & Sweeteners

06 - 1 cup rolled oats, gluten-free if needed
07 - 2 tablespoons honey or maple syrup
08 - 1/2 teaspoon vanilla extract
09 - Pinch of salt

→ Optional Coating

10 - 1/4 cup shredded unsweetened coconut

# How To Make It:

01 - Combine cottage cheese, protein powder, lemon zest, lemon juice, honey, vanilla extract, and salt in a food processor. Blend until completely smooth and creamy, scraping down sides as needed.
02 - Add rolled oats to the processor and pulse several times until well combined. The mixture should begin to hold together when pressed, but retain some texture from the oats.
03 - Transfer mixture to a mixing bowl. Gently fold in fresh blueberries using a spatula, taking care not to crush or mash the fruit.
04 - Refrigerate the mixture for 10 minutes to firm up slightly, making it easier to handle and shape.
05 - With damp hands to prevent sticking, roll the mixture into 16 evenly sized balls, approximately 1 tablespoon each.
06 - If desired, roll each ball in shredded coconut until evenly coated on all sides.
07 - Place bites in an airtight container and refrigerate for up to 4 days, or freeze for up to 1 month. Thaw frozen bites in the refrigerator before serving.

# Expert Suggestions:

01 -
  • These bites take 15 minutes from start to finish and keep you full for hours thanks to the cottage cheese and protein powder combo
  • The lemon zest cuts through the richness perfectly, making them taste like dessert while packing 20 grams of protein per batch
02 -
  • Over-blending the blueberries is the number one mistake—fold them in by hand at the end for those pretty purple pockets instead of gray dough
  • If your mixture feels too sticky to roll, chill it longer rather than adding more oats, which can make them dry and crumbly
03 -
  • Room-temperature cottage cheese blends much more smoothly than cold, so take it out of the fridge 15 minutes before starting
  • Zest your lemon before juicing it—its way harder to zest a lemon thats already been squeezed half to death
